Broccoli with Dijon Vinaigrette
serves 4
Ingredients
- 1 hd broccoli, cooked
- 4 t olive oil
- 1/4 C scallions, fine chop
- 1/2 t dried tarragon
- 1/2 t dried mustard
- 3 cl garlic, minced
- 2 T red wine vinegar
- 2 T water
- 1 T Dijon mustard
Instructions
- Saute the scallions, tarragon, dry mustard and garlic in oil.
- Remove from heat, whisk in the vinegar, water and Dijon. Season to taste.
- Dress the broccoli, plate and serve.
